Lorainne Vaughan's lemon loaf . . .

We found this recipe through a friend, Lorainne Vaughan, back when after an evening of visiting the munchies were very important. And Lorainne had this one, which we have made over and over again in the following 40+ years. And it's simple, quick, and delicious every time.

 

Ingredients

1 Lemon cake mix

1 lemon jello powder

   - mix well together

 

add 4 large eggs

3/4 cup mazola corn oil

3/4 cup water

 

Everything in one bowl, mixer on high for seven minutes . . .

 

Grease two loaf pans, pour half mixture in each . . .

 

Bake at 350F for 60 minutes.

 

Have 1/2 cup icing sugar mixed with 2 1/2 tbsp of lemon juice ready. Remove loafs from oven, prick top with fork (many holes), pour icing mixture over top. Let cool and it will disappear by itself . . .
