Baked Cod with lemon & garlic . . .

Ingredients:

4 cod fillets (about 6 oz each)

3 tbsp olive oil

3 cloves garlic, minced

1 lemon, juiced and zested

1 tsp paprika

1/2 tsp dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

 

Instructions:

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it.

Make the Garlic Lemon Mixture: In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, paprika, thyme, salt, and pepper.

 

Prepare the Cod: Place the cod fillets in the prepared baking dish. Drizzle the garlic lemon mixture over the fillets, making sure they’re well coated.

 

Bake the Cod: Bake the cod fillets in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.

 

Garnish and Serve: Garnish the baked cod with fresh parsley and serve with lemon wedges on the side. Pair it with steamed vegetables, rice, or a light salad for a complete meal.

Add Veggies: You can add thinly sliced vegetables like zucchini or cherry tomatoes to the baking dish for a one-pan meal.

Check Doneness: Cod is ready when it reaches an internal temperature of 145°F (63°C).
