This recipe for Baked Beans was gifted to us from very dear friends and long time partying buddies.
It is in our opinion, unquestioningly, the best flavoured soul satisfying French Canadian baked Bean
dish thatches ever come through our door . . .

"BILL"
Fèves au lard a la Ste-Lucie
2 pds dried beans
1 pd bacon
2 onions
1tab spoon dried mustard
2 cups Brown sugar
1 cup molasse
1 tab coarse salt
1/2 teasp pepper
1 teasp savory (not more)
1/2 cup ketchup
Cover the beans with cold water let stand for 12 hours
Bring to a boil and then "Simmer" for 1 hr.
Cut the bacon in 2"
Cut the onion in circles
Put this and the rest of the ingredients in a jar, add beans and the water, to cover. Close the jar.
325º 5 to 6 hours.
