Roasted beet, blue cheese towers . . .

Sweet, earthy, creamy, and crunchy -

perfection in every bite!

 

Ingredients:

3 medium beets, roasted and sliced

1 large pear, thinly sliced

½ cup crumbled blue cheese

¼ cup toasted pecans, chopped

1 tbsp honey

1 tbsp balsamic glaze

1 tbsp olive oil

Fresh thyme sprigs

 

Instructions:

        Roast beets at 400°F wrapped in foil for 45–50 mins. Cool, peel, and slice.

        Heat olive oil in a pan. Add pears, drizzle with honey, and cook 2 mins per side.

        Stack beet slices with blue cheese and pear slices.     Repeat, ending with cheese on top.

        Sprinkle with pecans and thyme. Drizzle with balsamic glaze and serve.
